 Crafted as part of our Rare Series, ‘Peregrine Falcon’ is a study in precision - bold, composed, and unapologetically complex. From the first sip to the lingering finish, everything about it feels deliberate.

 Stepping away from the more traditional French Oak wine casks used in Australia, this whisky has been matured for 4.5 years in a single 200 litre American Oak Shiraz cask from Peregrine Ridge Winery in Heathcote (VIC) and finished in a refill American Oak Bourbon cask. This is a whisky that balances richness with control. The Shiraz influence brings big dark fruit flavours with depth and generosity, while the bourbon cask balances, refines and lifts, creating something layered, textural, and quietly powerful.

 Bottled at 50% ABV, this isn’t a whisky that shouts.

 It holds its line.

 Only a limited number of bottles have been produced. Just 288.

 Once it’s gone, it’s gone.

Tasting Notes

Nose

Glacé cherries, toasted coconut, hot jam doughnuts and crème de cassis.

Palate

Spiced blueberry compote, sweet vanilla yoghurt and flaky shortcrust pastry, layered with beurre noisette and Jersey caramel.

Finish

Long, rich and buttery, with mouth-filling blueberry yoghurt & vanilla pastry.
