Rare Series Release
Some whiskies take their time.
Others arrive with intent.
Crafted as part of our Rare Series, ‘Peregrine Falcon’ is a study in precision - bold, composed, and unapologetically complex. From the first sip to the lingering finish, everything about it feels deliberate.
Stepping away from the more traditional French Oak wine casks used in Australia, this whisky has been matured for 4.5 years in a single 200 litre American Oak Shiraz cask from Peregrine Ridge Winery in Heathcote (VIC) and finished in a refill American Oak Bourbon cask. This is a whisky that balances richness with control. The Shiraz influence brings big dark fruit flavours with depth and generosity, while the bourbon cask balances, refines and lifts, creating something layered, textural, and quietly powerful.
Bottled at 50% ABV, this isn’t a whisky that shouts.
It holds its line.
Only a limited number of bottles have been produced. Just 288.
Once it’s gone, it’s gone.
No reruns. No second chances.
Tasting Notes
Nose
Glacé cherries, toasted coconut, hot jam doughnuts and crème de cassis.
Palate
Spiced blueberry compote, sweet vanilla yoghurt and flaky shortcrust pastry, layered with beurre noisette and Jersey caramel.
Finish
Long, rich and buttery, with mouth-filling blueberry yoghurt & vanilla pastry.
Spirited. Lively. Never Far From The Action.
Willie Wagtail is a whisky that proves restraint can be just as rewarding as experimentation.
Matured in a 3rd Fill 100L French oak ex-Pinot Noir barrel from Scotchmans Hill Winery, this release takes a different path to its Rare Series predecessors. Rather than dominating the spirit, the well-seasoned cask steps back, allowing the character of our new make to take centre stage.
The result is a whisky of balance, texture and elegance, where spirit and oak work in harmony.
Like the bird that inspired its name, Willie Wagtail is energetic, engaging and impossible to ignore. Always on the move, it darts and dances through the landscape with confidence and charm, bringing life wherever it appears.
Tasting Notes
Nose
Lemon meringue pie, vanilla wafer and Amaretti biscuits.
Palate
Coconut friands, toasted sourdough spread with cashew butter and finished with a drizzle of honey.
Finish
Satin-textured and richly mouth-coating, carrying lingering creaminess and a long malted fade.
Bottled at 50% ABV and limited to just 161 bottles, Willie Wagtail is our smallest release of 2026 and the final whisky in this year's Rare Flight collection.
A whisky that celebrates spirit over cask, texture over intensity, and balance over bravado.
Rare Series Release
Not for the whisky purists.
Crimson Rosella is one of the most unconventional releases we’ve ever created. It’s a whisky designed to challenge expectations while still delivering depth, balance and serious drinkability.
This limited Rare Series release began its journey in an American oak ex-Heathcote Shiraz cask from Peregrine Ridge Winery. But here’s where things get interesting…
That same cask had previously matured Rosey & The Rabbits; our barrel aged gin featuring Turkish apricot and black lime. Rather than seeing that as sacrilege, we leaned into the experiment.
The whisky was matured in this richly seasoned cask before being blended with 30% ex-bourbon matured whisky and then returned to refill wine casks for final maturation and integration.
The result is bold, layered and unlike anything else in our range.
Expect rich fruit, confectionary sweetness, warming spice and a subtle lift that keeps the whisky vibrant and endlessly intriguing.
Tasting Notes
Nose
Dried apricots, prune, citrus peel, toasted oak and beeswax.
Palate
Red jelly frogs, custard tart, frangipane and sticky toffee pudding.
Finish
Long, warming, lingering dried fruit and syrupy cake sweetness.
Named after one of Australia’s most colourful native birds, Crimson Rosella reflects the whisky itself; vibrant, playful, distinctive and impossible to ignore.
With only 458 bottles released, this is a rare whisky for adventurous drinkers who appreciate flavour, experimentation and a story worth sharing.
