ENHANCE YOUR WHISKY BY THE BAY EXPERIENCE

Step away from the festival floor and take your Whisky By The Bay experience a little deeper.

New for 2026, our VIP Silo Sessions are four intimate, one-hour tasting experiences held inside the Silo at Bellarine Distillery.

Each session brings together four incredible Australian spirits brands around one fascinating theme. With a small group of fellow spirits lovers, you'll have the opportunity to sit down with the people behind the spirits, hear the stories behind what's in your glass, ask questions and taste some very special drams.

And these aren't simply the same pours you'll find on the exhibition floor.

Depending on the session, expect rare and limited releases, unusual cask expressions, museum stock, preview bottlings and spirits selected especially for the Silo.

  • 01 - WHAT'S THE MALTERNATIVE?

    12.45pm–1.45pm

    Whisky isn't the only spirit worth getting excited about.

    Australian distillers are doing some seriously interesting things beyond whisky, and this session is your opportunity to discover them.

    Join us for a journey through Australian brandy, rum and whisky liqueur, exploring how distillers are applying the same obsession with fermentation, distillation, casks and flavour to an entirely different collection of spirits.

    Expect some surprises and perhaps a new favourite pour that isn't whisky at all.

  • 02 - WHAT IS AUSTRALIAN WHISKY?

    That's a surprisingly difficult question to answer.

    Australian whisky has developed a global reputation for doing things differently but with distilleries spread across dramatically different climates and regions, working with different grains, casks and production philosophies, is there really such a thing as an Australian whisky style?

    And we have four very different distilleries with four very different perspectives on what makes Australian whisky… Australian.

  • 03 - SMOKE SIGNALS

    3.15pm–4.15pm

    Not all smoke is created equal.

    From softly smouldering to unapologetically peated, Smoke Signals explores the many different ways smoke can find its way into a whisky glass.

    And this line-up is rather special.

    Four very different interpretations from whisky made using coastal peat harvested on Flinders Island to Islay, Campbeltown and a rather intriguing Laphroaig cask.

    Expect peat, smoke, char, coastal influence and plenty of conversation about why smoky whisky can taste so remarkably different depending on where - and how - it's made.

    4.30pm–5.30pm

    Taste the past. Then get a glimpse of what's coming next.

    Last Bottles & First Pours brings together bottles from two completely different ends of the whisky journey: older, rare and limited releases alongside works-in-progress, preview bottlings and experimental spirits that aren't yet available to the public.

    Join us for the opportunity to taste something you may never see again… alongside something you can't buy just yet.

    It's part tasting, part whisky time machine and potentially your chance to say “I tried that before it was released.”
