In 2019 we sought more body and texture in our new make spirit. We experimented with different craft yeast and the results exceeded expectations. With this rich and weighty spirit we filled two very old ex brandy barrels sourced from Tarac in South Australia. The barrels were resized to 100L, heavily charred and filled with spirit at 64% abv.

TASTING NOTES

Nose: Lemon meringue pie, marmalade on toast, honey.

Palate: Apricot nectar, buttered crispbread, sweet tea.

Finish: Waxy honeycombe & melted butter.

This rare release single malt whisky is a marriage of 1st fill 100L charred French oak pinot noir barrels sourced from local Scotchmans Hill winery. They were filled at 64% abv and after two summers of extracting rich and complex tannins the spirit underwent a second maturation in 1st fill 200L American oak bourbon barrels. This second maturation sweetened and softened the whisky adding vanilla and caramel notes to the spice and the red fruit flavours previously extracted from the wine barrels

TASTING NOTES

Nose: Green apple skins, vanilla tea cake with raspberry coulis, malted caramel.

Palate: Toffee apple, bread & butter pudding, charred figs.

Finish: Melted butter & maple syrup.

Eirene

Private Release September 2022

In 2019 we sought more body and texture in our new make spirit. We started experimenting with different craft yeast and the results exceeded expectations. With this rich spirit we filled heavily charred 10L and 20L South Australian brandy barrels at 64% abv. Halfway through maturation the spirit was reduced to 58% and married together in ‘Eirene’ a 2nd fill 100L ex Pinot Noir French oak barrel. With only 61 bottles of Eirene produced, this release was not made public.

TASTING NOTES

Nose: Rhubarb & apple pie, vanilla custard, dark plum, cherry & cinnamon.

Palate: Salted caramel, prunes, raspberry and brandy snaps.

Finish: Maple syrup, butter & warm spice.


Christmas Pud

Independent Bottling December 2021

This independent bottling was created from three single malt whiskies matured in Australian Muscat, Tawny and Shiraz Cabernet barrels before being married together in an American Oak Bourbon cask. The three wines have created a complex, sweet and spicy dram that paired perfectly with Christmas pudding.

TASTING NOTES

Nose: Raisins, dried figs and brandy butter

Palate: Candied orange peel, cinnamon, nutmeg & brown sugar.

Finish:  Warming with lingering spice.


Sister Sunday

Released October 2021

Filled into casks from the same distillation as our first release, Bad Boy Billy, it seemed fitting to name this barrel after Billy’s actual sister, Sunday. And like this whisky, she shows more vanilla, is a touch sweeter and a little more mature.

TASTING NOTES

Nose: Apple crumble, vanilla custard, blackberry jubes, fresh figs.

Palate: Pecan pie, salted butter, malted caramel, red berries, toasted sourdough.

Finish: Scones, cream & apricot jam.


Bad Boy Billy

This inaugural release of Bellarine whisky was the first whisky to be made in the Geelong region since the closure of the Corio Distillery in the 1980’s.

In 2018 Ronald, our 800L copper pot still, was filled with its first ‘wash’ made from an Australian pale malted barley and a blend of ale and whisky yeasts. Two Pinot Noir barrels, sourced from local Scotchmans Hill winery, were emptied of the final vintage, re-coopered down to 100L then heavily charred. They were filled with the distillery’s first three spirit runs at a filling strength of 64% ALC/VOL

TASTING NOTES

Colour: Amber & rose gold.

Nose: Apple & plum crumble with vanilla custard.

Palate: Salted caramel, white pepper & oak.
