Description

Matured for 4.5 years in a single American oak Shiraz cask from Peregrine Ridge Winery in Heathcote, then finished in refill American oak bourbon, Peregrine Falcon is rich, layered and tightly composed.

Expect dark fruit, vanilla, buttery pastry and a long, generous finish.

How to Drink It

Start neat and give it a little time in the glass.
At 50% ABV, a few drops of water can help open up the fruit, vanilla and pastry notes without losing its structure.

Tasting Notes

Nose: Glacé cherries, toasted coconut, hot jam doughnuts and crème de cassis
Palate: Spiced blueberry compote, sweet vanilla yoghurt, flaky shortcrust pastry, beurre noisette and Jersey caramel
Finish: Long, rich and buttery, with blueberry yoghurt and vanilla pastry

Peregrine Falcon spent 4.5 years in a single 200L American oak Shiraz cask from Peregrine Ridge Winery in Heathcote, before finishing in refill American oak bourbon.
The Shiraz cask brings depth and dark fruit. The bourbon cask lifts and refines it.
The result is bold, composed and quietly powerful.
