Aquila Audax - 21st June Release

An apex predator of the skies, the Wedge-Tailed Eagle – ‘Aquila audax’ - is a symbol of bold defiance and untamed power. It soars effortlessly, surveying its vast domain with piercing intensity - fearless, patient, and unrelenting. This noble bird is a fitting avatar for this whisky which embodies a bold richness that glides majestically across the palate.

Matured in 1st fill Oloroso sherry, finished in refill Bourbon casks.

TASTING NOTES

Nose: Black forest cake, candied oranges dipped in dark chocolate.

Palate: Florentine biscuits, browned butter, dark caramel fudge.

Finish: Long, rich, velvety & luscious with lingering notes of date & walnut cookies.

Flagship Series - Oak & Spirit

Whisky takes time, and to date our releases have been limited, varying from 61-450 bottles at a time. As we have honed our craft we have invested in laying down a larger stock of maturing casks and we are now working toward establishing a Flagship range of whisky known as Oak and Spirit.

The ‘oak’ series is a celebration of the rich and complex characters that oak can impart to malt spirit during maturation. While the ‘spirit’ series will be a celebration of the distillery character imbued into our malt spirit. While our limited releases to date will still be made available as they mature and known as the RARE Series, the hope is that our Flagship series OAK and SPIRIT will be readily available to consumers. While Oak Batch 3 is now available we look forward to announcing the release of SPIRIT in 2026.
